SOOOOO......What's for dinner?

Thank goodness it is Friday.  Friday dinners are tough around my house.  My husband likes to keep up with the "no meat on Friday".   Growing up,  Catholic families never ate meat on Fridays because that was the Catholic rule.  Don't particularly know why that rule was changed.   At his house, each day of the week was dedicated to a particular food...ie: Chicken or Pork on Monday, Steak on Tues, Pasta on Wednesday, Steak (again) on Thursday (his dad loved steak) ,a non-meat meal on Friday, Saturday was "mom doesn't have to cook day " - dinner out or something like pizza ..and Sunday was the BIG MEAL  --- dinner with Nana -  the Roast Beef or Roast Pork, with potatoes and vegetables -  the FEAST !!!

Well, I was well prepared today.   I collect recipes .... from everywhere.... newspapers, magazines, the labels from jars or the back of boxes.   I just can't help myself.  My favorite garlic bread recipe came from a garden seed magazine one of my best friends from high school sent me years ago.   I have recipes in notebooks, file folders, hanging on the fridge, in a computer program,  not to mention all the cookbooks I have accumulated over the years.   WHY DO I KEEP THEM ! ?  There are so many good recipe sites on the internet.   But, what if I have to make it again and I can't find it, then what.    A cousin of my husbands decided to do a "family cookbook".    I sent her all of my favorites so now they are in a word document too!.  She even included family tree information..  It was nice sharing family recipes, recipes we may never ever know about or even think of trying.

Tonight's dinner -  Salmon with Spicy Cranberry Sauce and Pumpkin Cheddar Mac and Cheese.  The Salmon recipe looks like it is a page ripped out of a magazine and the M&C was off the internet ( the print is so small though I had to put on a pair of reading glasses while i was preparing dinner - so since I am now in a darkened room, forget about me reading where it came from. )

Eating food and making dinner is such a major part of our being.  As I look back at the years, I wonder why I haven't put in more effort to make REALLY GOOD food.   Well, this is someone that I have now determined  that I want to be.  Try to find the time to make some really good meals and share them with all that I know ....
because I know..... they are probably thinking the same thing.....

UGHHHHHH....WHAT AM I GOING TO MAKE FOR DINNER TONIGHT ! ! ! !
